Abstract

In the research, it was aimed to determine the honey consumption level and consciousness level of consumers in the provinces of Artvin, Bayburt, Giresun, Gümüşhane, Ordu, Rize, Samsun and Trabzon. This survey study was conducted with 1275 people in 2017. 840 of the respondents are male and 435 are female. According to the research findings, the average age of the participants is 38. It was determined that 64% of the people who participated in the survey were undergraduate or graduate school graduates. 67,37% of the participants stated that they consume filtered honey, 19,29% honeycomb honey and 8,39% karakovan honey. It was calculated as the average annual honey consumption level; 8,61 kg/person filtered honey, 7,12 kg/person honeycomb honey and 3,77 kg/person karakovan honey. It was observed that the people who bought honey mostly bought the Eastern Black Sea Region honey, followed by the Northeastern Anatolian region honey and the Aegean Region honey. It has been understood that the consistency, brand and production date are effective in the selection of honey, respectively. It has been determined that honey is mostly purchased from beekeepers and supermarkets. In addition, it has been determined that consumers care about packaging when purchasing honey and they prefer glass jars the most when purchasing products. It was determined that honey was consumed most intensively in the winter months in the studied families.
